Ingredients

  • 1 l chicken broth
  • 2 egg
  • 120 g lemon (1 fruit)
  • greens (for serving)

Instructions

  • Put the chicken broth on a boil and start whisking the eggs in the pan.
  • When the broth is already warm, carefully pour in the eggs and start stirring. If you bring it almost to a boil, the egg will go in threads. If it’s up to 60-70oC/140-158oF, it will just become cloudy gently, for me it’s preferable.
  • Add lemon juice, generously. Serve with chopped greens and a circle of lemon with skin for flavor.
