Kuku sabzi – a perfect Sunday breakfast or brunch from Leno Regushadze, the author of the Crazy Cucumber blog: nutritious and loaded with vitamins.
Kuku Sabzi is a green omelette with spinach and herbs, the Azerbaijani dish with a sauce made of yogurt and garlic. Spinach, cilantro, green onion, mint, dill, parsley – an excellent set of vitamins.
This dish came to Azerbaijani cuisine from Persia. It is also popular in Iran. Kukyu sabzi – literally, from Farsi, translates as a dish of eggs with greens. And you are not deceived! Sometimes this dish is served cold and used as an appetizer.
