Lilya Voronina, creator of the blog “Elf Kitchen“, shares the keto syrup recipe for smoothies and baked goods.
The keto syrup recipe will come in handy if you’re making keto smoothies or advanced keto desserts. Store it in a covered container in the refrigerator and use it as needed.
Prep Time: 5 minutes
Cook Time: 20 minutes
Ingredients
- 250 ml water
- 100 g erythritol
- 5 drops stevia
- 1 pinch xanthan gum
- vanilla
Instructions
- Bring water and sweetener to a boil in a small saucepan and stir until erythritol is dissolved. The combination with stevia makes the syrup taste more like regular sugar, but you can get by with just erythritol, increasing its amount to taste.
- Add the xanthan gum to the liquid and whisk with a blender. The gum works as a thickener and also prevents the erythritol from crystallizing in the syrup as it cools, meaning your syrup will stay evenly sweet even when it cools, and you won't need to warm it up every time before using it.
- At this point, you can add something to flavor the syrup if desired. Cool the syrup and pour it into a container or a bottle for storage, then put it away in the fridge. Zero calories, zero sugar, and lots of uses.
